Top 5 Cucina Calabrese Pasta Salads
It was in the 90s most of the last weeks in Pittsburgh, so we felt obligated to offer some pasta salad ideas to cool you down & fill you up. These are some of our favorites we’ve whipped up over the years. Our flavored & colored pastas make a great chilled side dish for those grilled goods & social-distanced outside picnics. Most of these aren’t “recipes”, more like ingredient lists to tinker with because everyone has different preferred portions. Mangia!
1. Greek: This is a nice, light salad that goes well with some grilled chicken or kabobs.
Ingredients: Artisanal Hemp Pasta, Gazebo Room Greek Dressing, Quartered Cherry Tomatoes, & Feta.
2. Chesapeake Style: This one's perfect to bring together with ingredients procured on your way to & from Ocean City.
Ingredients: Chesapeake Bay Blend Pasta, Lump Blue Crab meat, Chopped Eastern Shore Roasted cherry tomatoes, & olive oil.
3. Caprese: A standard combination in Southern Italy, which becomes an ITAL-YINZ hit at family reunions with some black & gold noodles.
Ingredients: Steel City Special Pasta, Halved cherry tomatoes, Buffalo Mozzarella (chopped), & Rana Pesto.
4. Deli Drawer: This dish was procured from some choice meats & cheese from Yardley General. Find your own local artisan food shop for great cured meats & cheeses to add.
Ingredients: Italian Herb Pasta, Sweet Sopressate, Chopped Green Pepper, Cheddar Cheese, & a Hint of Balsamic Vinaigrette.
5. Salmon & Italian Herb: This was one of my first experiments & I really liked the combo.
Ingredients: Italian herb pasta, olive oil, broiled salmon (just a bit of salt & pepper), & blistered cherry tomatoes.
